Sleepover
It has been a fun filled day, playing Auntie and hanging out with the kids. It was a bit emotional as well. My sister and her family are moving to Fort Worth, or as my sister says Fort Yucky. No offense to anyone who lives in that area, I have heard it is quite nice but she LOVES Austin and does not want to leave. Unfortunately, her husband's job is in Fort Worth so you gotta do what you gotta do. But when I picked Henry up from his last day at Regents School of Austin and he gave everyone a final hug and started crying it made me cry. We soldiered through it together and talked all about how change is good but how it can be sad at the same time, and about the new adventures ahead. We will be helping them move next weekend and are making the most of our time together now. So I have one kid down and the other three are still on high alert! I will have to gear them down pretty soon. After our emotional cry I came home HUNGRY! I needed something quick so I made my default Greek Yogurt Berry Crunch Bowl. I mixed a 3 kinds of cereal together to give it a little extra oomph today. Greek Yogurt Berry Crunch Bowl 1/2 cup of Fage 0% Greek Yogurt Red Raspberries Golden Raspberries Blueberries 1/3 cup Go Lean Crunch 1/3 cup Go Lean 1/3 cup Shredded Spoonfuls Yum! This was quick and delicious. My snack consisted of 1 string cheese wrapped with one slice of deli turkey and a handful of fresh cherries. Yum. I then needed a little pick me up and made myself a New Orleans Iced Coffee. I absolutely love this stuff. N.O Brew. N.O. Brew is coffee, chicory and all-natural flavors. Nothing else. There are no unhealthy preservatives, flavor enhancers, sugars or syrups. Mix it with water, milk or your favorite milk substitute and enjoy. I like to make mine with 2 parts coffee, 1 part Almond Breeze Unsweetened Vanilla Milk and 1 packet Truvia. Not this hit the spot. Once the warmer weather starts I generally start drinking the iced coffee daily. You can buy this at Whole Foods here in Austin or order it online. For dinner I tried to sell the kids on this fabulous recipe from The Flexitarian Diet- Cauliflower Cashew Curry. Let's just say, I did not have a lot of takers but I tried! I love this recipe- it is so healthy and really, really, good. My husband ate it but said I may be overstating it by saying it was good. He said it was "healthy". I LOVED it and have leftovers for tomorrow. It has super flavor and I think it is beautiful. Cauliflower Cashew Curry- The Flexitarian Diet by Dawn Jackson Blatner. I doubled the recipe to make it for two + people. 3 cups Cauliflower 2 teaspoons Curry Seasoning 1 can crushed tomatoes 1 can red kidney beans 1/2 cup of frozen peas, thawed 2 tablespoons raisins 1 cup of brown rice 1/4 cup of chopped raw cashews2 green onions chopped In a medium saucepan over medium heat, cook cauliflower, curry, tomatoes, kidney beans,peas,and raisins covered for 10 -12 minutes. Serve on Brown Rice and top with cashews and green onions. This is definitely a keeper for me. I really enjoyed it and it is super filling.
