Slow cooker Sunday after a surprise 30th bday party! And oh, it's Chicken Cordon Bleu:)

Hi everyone!  I hope you've had a great weekend!  Remember how I mentioned friends were coming over last night for a belated 30th bday party for me?  Well turns out they planned a limo into Grill 23 in Boston!  Amazing food that I would 5 stars to, no doubt!  I'll blog about that another time;)  Here's a couple pics from the night:)

So a big day yesterday!  Thank you to everyone who donated for the race, and a big thanks to the husband Ron, Amanda, Mike, Melissa, Barrett, Jen, Jason, Katie, and Kevin for my surprise!  

Back to tonight!  I allowed myself quite a relaxing day today, as I usually try to do on Sunday's:)  Nothing but watching some golf, sleeping in, laundry/packing for our upcoming Aruba trip, reading, and some TV:)  Of course, all while the Chicken Cordon Bleu was simmering away in the slow cooker!  So easy = perfect for today!

You will need:

skinless, boneless, chicken breast, 3 lbs - I bought this is thin strips and just put 'em on in the crockpot - you could less chicken of course, I just wanted to make a large amount, so I could freeze some:)1/2 lb deli-sliced cooked ham1/2 lb deli-sliced swiss cheese2 10 3/4 oz cans cream of chicken soup1 box dry chicken stuffing mix, prepared according to the boxLayer all ingredients in the crockpot exactly as they are listed.

 

  

  

  

  

Cook on low for 6-8 hours, or until the chicken is cooked thru (for me, it was 6 hours) - easy, huh!!

Now, I know it's not as pretty as usual chicken cordon bleu, which is known for it's wonderful colors and layout (is that the right word to use???), but the taste is the same, and even better in my opinion.  The way the cheese melts into the entire pot is my favorite part!  The ham doesn't melt, so I'm sure you could pick out the ham slices, put those on the plate first, and then cover it with the rest of the mixture and wrap it up for a different look, but I'm just going to do that myself with each bite:)  



 

I'm off to enjoy it now...and then to enjoy some of Melissa's leftover cupcakes (that she should blog about!) and her boyfriend's wonderful ice cream cake that he made me from scratch!  I'm a lucky lady:)  
And btw T-3 days until Aruba!!!
