Slow Cooker Sweet Pulled Pork Tacos
Slow cooking...for all those working folk out there!
I love cooking in the crock pot because it really frees up my day. This recipe does call for a little more effort than most crock pot recipes, but it's totally worth it! Sweet Pork is great in a taco, on a bun, and even over a bed of greens. The sweet, and just a tad spicy, pork will knock your socks off, and leave you begging for more! Simple recipe...let's go! Start off my mincing up 2 cloves of garlic. Fresh is always best{but I'll use the canned stuff when I'm in a hurry}. Salt and Pepper your Pork Roast{I used a Sirloin Pork Roast}, then heat some oil in a skillet and sear the roast on all sides. This will really bring out more flavor in your little roast. Transfer the slightly browned roast to your crock pot and add the garlic. Pour water over the roast till it's a little more than half way covered. Put the lid on, set to low, and relax for about 5 hours! Go shopping! Read the Twilight Series{again}! Take your kids to the movies...possibilities are endless! After 5 hours remove the roast, and drain all the water. Return the roast to the crock and break into 3-4 big chunks. Then add some sweetness! Start off with 12 ounces of rootbeer {you can use Dr. Pepper if you prefer, just don't use diet!} and 1/2 cup of brown sugar, add it to the crock pot. Again, close the lid, and let it go on low for another 3 hours. Transfer the roast to a large pan and pull it apart with a fork. Add a can of enchilada sauce {this is the spicy part} and a can of diced green chilies. Add more rootbeer and brown sugar to your taste. The more sugar, the sweeter the pork; the more enchilada sauce you add, it will be less sweet. Let your mouth be your guide! Let it simmer to blend all the flavors. Yummy! It was worth waiting all day for these delicious tacos! Here's the recipe, take it, use it! Sweet Pulled Pork- Slow Cooker Ingredients: 1 pork roast (2-3 pounds) salt & pepper 2 garlic cloves minced water 2 cans Rootbeer (or Dr. Pepper) brown sugar (to taste) enchilada sauce (to taste) 1 small can green chilies Directions: Salt and pepper roast to taste, put roast and garlic in a crock pot, add water (fill a small crock pot about half full) and cook on low for about 5 hours. Remove roast, drain water and return to crock pot. Add 1 can (12 ounces) of Rootbeer and 1/2 cup of brown sugar (to start off with). Pull pork apart into 3 or 4 chunks. Let roast cook on low for 3 more hours. Transfer roast (including liquid) to a large skillet and pull apart. Add green chilies, enchilada sauce, more brown sugar and more Rootbeer (the more sugar and soda the sweeter it gets, and more enchilada sauce makes it less sweet). related searches : Slow
