Smoked salmon, courgette and vodka pasta
1 courgette 3 shallots 1 clove of garlic farfalle pasta 3 slices of smoked salmon, cut into strips 100g creme fraiche 25g grated parmesan 25g grated gruyere (optional) tbl spoon cream cheese handful of fresh parsley, chopped 50ml vodka salt and pepper olive oil Cook pasta according to pack instructions.In a bowl, mix the creme fraiche, cream cheese, parmesan, gruyere and parsley. Season with salt and pepper.Whilst the pasta is cooking dice the shallots, garlic and courgette and fry in a little olive oil until soft. Add the vodka to the courgette and shallots and allow to bubble away for 5 minutes or so. Then add the soft cheese mixture and stir everything thoroughly. Then add the smoked salmon strips and stir again.Drain the cooked pasta and add to the sauce. You may want to add a spoonful of the pasta cooking water to the sauce to loosen it a little.
