S'more cupcakes with a marshmallow frosting and graham crackers on the bOTTom

By a Latte' with Ott, A (Visit website)

One night I was flipping through the channels for something to watch and I stumbled upon this show called Cupcake Wars on the Food Network.  As I watched for awhile, one of the contestants was baking a S'more flavored cupcake.  I thought that was a cleaver idea, but didn't think too much else about it and the show really didn't give a recipe.  Well a week ago I needed a dessert so I thought, and thought and for some reason those cupcakes came to mind, but I didn't exactly have time to bake something up from scratch.  So I opened a box of cake mix and the following is how I made my own version of a S'more Cupcake which was inspired by this show.  (Now before I go any further I have to tell you, I am still not bitten by the cupcake bug fad even though I have blogged twice about cupcakes :) but sometimes they are so darn cute I can't help myself.)

To start with I made a graham cracker crust for the bottom of my cupcake liners.  I took 4 graham cracker and crumbled them up and then added 2 Tablespoons of melted butter; stirred and then packed into the bottom of my cupcake liners with a spoon.

Next I stirred up my chocolate cake mix and poured that on top of the graham cracker crust.
I then sprinkled chocolate chips on top of the batter and baked them.
Once they had cooled I mixed up a frosting of 50% marshmallow cream and 50% white frosting (from a can).

After the cupcakes were iced I drizzled chocolate on top (mostly to make it look cute)

Then I topped them with a marshmallow and torched it to give it that roasted look.  I must say the taste of the toasted marshmallow was probably the best part.

Overall, it was a pretty quick and easy way to dress up a cupcake.

Want to know what else I do to save time around my kitchen??  I can.  Stop by next week for my "Canning Week Blog Party" where we will be posting lots of tips, recipes, linky parties and give-a-ways all related to canning.  And find out how one day of canning in the summer saves me lots of time and resources all winter long.
