SMS Caramelized Onion, Sage and Cheese Muffins Better late than never, right? Or is it, a day late and a dollar short? Whatever. In this case, I had a bit of an advantage making these muffins a day late. I got some tips from all of the other Sweet Melissa Sundays bakers who had made these muffins already. Some said the muffins were a bit bland. I added garlic and a touch of balsamic vinegar to my caramelized onions to give them more flavor. I do not love sage. I added the amount the recipe called for and it was enough for me. It's just a hint of flavor, but very aromatic. I think they are a lot like a biscuit. They have a nice texture and are not dry at all. I also added extra caramelized onions. I used a whole vidalia onion. The recipe calls for one cup of caramelized onions. I probably used 1 and 1/4 - 1 1/2 cups of onions. The batter was very thick and my 12 muffin cups were piled high, but there was no overflow, they rose perfectly and were big and beautiful. (which you totally should) Hanaa and the other bakers, I apologize for being late. I will get around to commenting! I have been fighting a cold and the weekend just got away from me. I really enjoyed this recipe. It's similar to the savory scones I made last week, but much lighter. Also, you can add any cheese/herb/veggie combo you want, to the muffin base. According to my daughter, they have great flavor. That's always a good thing. Check out the pics. Can you see the caramelized onion on top? Yummy!
