SMS Spiced Pumpkin Cookie Cakes

Yes! It's still Sunday and I'm ready to blog about this week's Sweet Melissa Sundays recipe! I am on a roll, I tell ya. This week's recipe was chosen and posted by Debbie of Every Day Blessings of The Five Dees. What a perfect choice for October. I didn't have any trouble finding canned pumpkin, like some others did. This recipe was pretty easy and very delicious. The cookies really are like cakes-very soft and moist. The filling is a cream cheese frosting, which I love. It is supposed to be flavored with orange zest and vanilla, but I used maple extract and left out the orange zest. They remind me of pumpkin cookies I made last year that were topped with an orange glaze. The orange really works well with the pumpkin flavor. I was just in the mood for the maple. It is really good in the cream cheese icing, but it made the icing a little brown. I like these so much, they may sneak into the Christmas cookie rotation!
