Snacks, Dinner and Dessert

Good Evening! 

It has been a nice Monday with a lot of good food today.  My snacks today were a Honeycrisp Apple with Cinnamon and a Breakfast Cookie with a cup of tea.

 
I am so excited that Honeycrisp Apples are back in season.  I love crisp and crunchy apples and this once hit the spot.  There really is something so enjoyable about eating an apple and as the saying goes "an apple a day keeps the doctor away."  Apples remind me of Fall weather and we have actually had some nice cooler days lately.  I can't wait to go to Central Market or Whole Foods and try some of the special apples varieties that are in season right now.
 
 
After I picked up the kids from school we came home and had a snack. I had a breakfast cookie and a cup of Tazo Cucumber White Tea.  This was super enjoyable.

I was craving salad this evening and made an Edamame, Spinach and Almond Salad.
 
 

Edamame, Spinach and Almond Salad

2 cup spinach, chopped
1/2 cup cooked edamame
1/8 cup of red onion, chopped
6 grape tomatoes, halved
1/2 cup yellow and red bell pepper, chopped
1 tablespoon slivered almonds
1/2 tablespoon feta cheese

Dressed with 1 tablespoon dijon mustard, 1 tablespoon balsamic vinegar, 1 tsp olive oil.

Yum!  The edamame added a nice punch of protein and was salad was absolutely delish!

The kids had edamame, pan-fried tofu, sticky rice and bell peppers for dinner.  They loved it and ate every little bite.  It is hard to find things that they actually eat for dinner but I find any kind of rice and protein combo seems to go over well.

Now for dessert, I am so super excited about this and can't believe I have been in the dark so long.  I was conversing via email with a past Eating Coach client today, both of us love frozen yogurt and she told me she was able to ween off the fro yo by making "soft serve" banana ice cream.  I have read about this before and always meant to give it a try but always seemed to forget.   After talking to her today I was determined to make it tonight!

It is ridiculously simple to make and wow, was it good!  I was so excited about it and had a bunch of frozen bananas that I had to make two batches, one Just Banana and the other Cocoa Banana.  
 
 

Just Banana Guilt Free " Soft Serve"topped with UnBar Chocolate

2 servings

2 bananas
1 tsp vanilla
1 tbsp vanilla Silk Soy Milk
1 tsp cinnamon
1 square of UnBar 70% Dark Chocolate, chopped

Combine ingredients in food processor and pulse until nice and creamy.  Serve immediately or freeze for 15 minutes.  Top with chopped chocolate.  Enjoy!  
 
This was freaking amazing.  I could not believe how creamy it was and it truly has the same consistency of soft serve.  Yum!


The kids loved it too.  Zoe and I decided we needed to make a batch of chocolate as well.  I finally have something to make that will use all the frozen bananas I have in the freezer.  I am bit picky about how I like my bananas (just ripe- no brown spots) but hate to waste food so freeze the over ripe bananas to use in smoothies and banana bread.  Needless to say, I have A LOT of Bananas.



Cocoa Banana Guilt Free "Soft Serve" 

makes 2 servings



2 bananas
1 tsp vanilla
1 tbsp vanilla Silk Soy Milk
1 tsp cinnamon
2 tbsp unsweetened cocoa

Combine ingredients in food processor and pulse until nice and creamy.  Serve immediately or freeze for 15 minutes.    Enjoy!  
 
This recipe is something you could really have fun with by experimenting with different flavor combos and toppings.  I am looking forward to doing that and who knew a simple banana could make such a great guilt free dessert!
