Snafood :: The Mister?s Birthday Cake
Everything started out swell. I had found a dairy-free chocolate cake recipe online. It was coming together beautifully. My measurements were correct. The batter seemed perfect. I popped the cake pan in the oven. Set the timer and made sure to not peek until it went off. I’m pretty sure the writer of this recipe meant to say “Pour batter into cake pans” and that the recipe would yield TWO cakes and not one. Pretty sure. Because when I opened the oven it looked as if my cake had a tumor of some sort. I’m glad I set the cake pan on a half-pan to be safe. I was at a loss and quite humbled. I licked my wounds and removed the chocolate-y growth and let the cake cool. I tested the excess – thankfully, the cake was very moist and delicious! We’d be celebrating his birthday soon and I had no dairy-free ingredients to attempt to make this cake somewhat appealing. So, I embraced its ugliness, plopped the “tumor” on top of the cake, and stuck his candles in. It’s definitely a cake to be remembered!
