Snake Catchers, Bunny Rabbits and Shortbread Toffee Cups
It seems that there are no snakes in New Zealand. In spite of it's lush grounds and deep forests, the snakes have not been able to make it this far out into the world to breed. *Thank God*. I can't imagine being surrounded by so much of this beautiful greenery and at the same time have to house a fear that a snake can creep up at any time. ![]() In cooperation with Mother Nature, New Zealand has, by law, banned snakes from entering the country. Now how cool is that? It appears though that there is a group of people employed as Snake Catchers, and their job is to be on the look out for snakes and inflict extreme punishment should one enter New Zealand without an invitation. Cute! *Thank you, Snake Catchers - You make me sleep well at night!* ![]() Daniela will be turning 4 years old in July, and she has very sweetly asked for a bunny rabbit. I am not sure how I feel about rabbits, or rather: rabbits in the house. I have two children as it is, three if you count my husband... and having a rabbit to care for will be giving me a fourth child! I'm not sure if I am as super a mom as I have projected (?) myself to be. *I fail at projection - even the camera does not like me. We have agreed that I should always be behind the camera, and not in front of it*. ![]() The bunny rabbit is still up for discussion - between me and myself. And okay... maybe my husband. Why not. I'm sure he won't be up for it, so that kinda puts us on the same page to start on. Soooo... here's the mommy-I-hope-this-makes-you-feel-guilty-enough-to-make-the-right-decision line: *Mommy can I have a bunny rabbit for my birthday present? Her name will be Kelly.* ![]() How did the bunny get a name so soon? And when was it decided that we would be getting a breeder?! A female!! I am the main breeder of this house - the Queen Bee - and no one else! Got that?! *Sigh* ![]() Guilt is spreading throughout me like a slithering snake... my daughter wants a rabbit and I do not want to indulge her little girl fantasies of owning and taking care of one, because I know that in reality... by bedtime on the day of her birthday, that rabbit will be my responsibilty. And I am an adult. I do not need more responsibility. *Waaahhh* Guilt, be gone!!! ![]() I guess I should be glad she's asking for a rabbit... and not a sheep. Or a cow. Or a duck. Hmmm. ![]() And so just like that... I am fine. All it has taken is a trail of these petite Shortbread Toffee Cups. I am shallow. This is my joy. I am still glad there are no snakes in New Zealand, and even glad-ER that there are Snake Catchers who ensure it. Shortbread Toffee Cups 250g AP Flour1g Baking Powder 2g Salt 30g White Sugar 60g Icing Sugar 230g Butter, Softened 350g Dark Chocolate Toffee Nut /Brittle Pieces Preheat the oven to 175 degrees C, and line two 12 cup mini-muffin pan with cake liners. Cream the butter and sugars together. Fold in the flour, salt, and baking powder. Gently knead into a dough. The texture will be crumbly at first. Be careful that you do not over-knead it. Fill the cake liners with with a spoonful of the dough and gently pat it down. Bake for 30 minutes. Remove from the oven, and cook on a wire rack. In a heatproof bowl, melt the dark chocolate over a pan of simmering water. When melted, dip the Shortbread Cups, top down, into the chocolate. Just before it sets, top it off with a piece or two of the toffee brittle. related searches : Snake
