Sockeye Salmon Sunday

Don?t you just love Sunday?s?  Sleep in, drink coffee, no agenda!

I awoke craving iced coffee. Luckily I made a batch a few days ago.

It must have been very caffeinated because I almost went out running.  Instead, I told myself I needed a day off after two days in a row of running, including the 10K race yesterday.  So?I ate a healthy breakfast, instead, before YOGA.

I headed out to the gym for my favorite yoga class with Lauri!  Before class, I ellipticaled for 25 minutes, stair-milled for 5 minutes, strength trained on two machines (back and shoulders) and then went into the studio.  EVERYONE loves Lauri?s class, especially on a cloudy Sunday.  I had to secure a spot!

Yoga was everything I hoped it would be?lots of shoulder and hip openers. 

I was starving after class, so I went to Costco!  Nothing beats samples at Costco at Noon on a Sunday!

I found a recipe from Spark People for Baked Dijon Salmon.

Dijon Baked Salmon
 
Ingredients

-1 cup fat free sour cream plain Greek Yogurt
-3 tablespoons diced scallions onion
-2 tablespoons Dijon mustard (any mustard will do)
-2 teaspoons lemon juice
-1 teaspoon garlic powder
-1/2 teaspoon black pepper
-1 1/2 lbs salmon fillets

Directions

1) Mix sour cream, scallion, Greek Yogurt, onion, mustard and lemon juice in mixing bowl
2) Preheat oven to 400 degrees
3) Lightly coat baking dish with cooking spray
4) Place salmon skin side down in prepared baking dish and sprinkle liberally or to taste with pepper and garlic powder
5) Coat fish with sour cream yogurt sauce
6) Bake salmon at 400 degrees until just done- about 20 minutes
