Some Halloween Treats

It is the last day of October, can you believe it? Well, that would mean that it is halloween as well :) Today I am posting a few treats that I am making to celebrate with friends tonight over a nice dinner and quiet night of fun. Some pumpkin cookies, ol' fashion carmel corn, and some apple stuffed acorn squash. All very "fall" treats and all very yummy, I must say. The cookie recipe that I am making comes from a fellow blogger that I enjoy very much. She is a chef and creates beautiful recipes that are so nourishing as well, these cookies are just like that. They are vegan, and they also carry the full flavor of fall in them. The link is here. I just made a few adjustments, and added some allergen-free chocolate chips to the tops to kinda make them look like little jack-o-lanterns. They didn't all turn out, but the added chocolate is tasty!
The next yummy snack I will be bringing to share is some ole fashioned carmel corn. The sad thing is that it is not friendly to people who need to avoid corn because of their digestion. I use organic corn, but they doesn't really make a difference for people who are trying to heal their intestines. So for those of you out there.... just shut your eyes to this yummy treat.
 Although, for those who are looking for a healthy alternative to the regular carmel corn, this is the recipe. It is so buttery, and it is not very hard to make. You will keep coming back for another handful, and people will be impressed with your "Homemade" abilities for sure. Here is the link. The next recipe is just a simple nutritious dinner or side to use up some squash and apples. You first need to cut the acorn squash in half, and then spoon out the seeds, you can clean and dry the seeds to roast if you so desire. Or, of course you can save for next's years garden. Which is always a good idea.Once you clean out the seeds you will have an open half to fill with apples. First, I bake the squash alone for about 45 minutes on 400 degrees. Then I pull from the oven and fill with two diced apples along with 1/2 cup or so of homemade applesauce, dashes of cinnamon, and a dose of drizzled agave nectar. Bake for another 15 minutes on 400 degrees. It will smell like apple pie, but wait, it's not pie, it's your vegetables smelling divine. A little something to add to any fall meal or if you are not eating sugar or grains right now, it could be even a great dessert.
