Sour Cream Potato Salad

I love potato salad. I do try to make different variations. My favourite would be potato and pineapple. Pineapple seems to pair off really well with creamy stuffs. Now am reminded of E pineapple cheesecake from Long john! :S

Anyways, most of the time, I use mayonnaise. This recipe however uses sour cream. I think it's perfect for those who dislike mayonnaise...or just for those who are health conscious. You can use low fat sour cream if you prefer.

Ingredients:
(serves 2)

2 hard-boiled eggs
2 potatoes - boiled, de-skinned and cubed
3 tbsp sour cream
Fresh black pepper
Salt
Chopped coriander/mint leaves

Method:
Separate the egg yolks and mash into sour cream. Season.
Cut egg whites in chunks.
Combine egg whites, potatoes, coriander/mint and sour cream. Mix well.
