Southwestern Cobb Salad with Avocado Ranch Dressing
Ah...salad! There is nothing easier or yummier (to me) then a fresh salad. As promised, this recipe comes from the giveaway we are doing this week...SOS: The Six O'Clock Scramble. This salad was so fresh and the dressing was the perfect finishing touch. What is so great about this salad, is you can use ingredients that are quick...a rotisserie chicken or microwavable bacon so that you don't have to spend all your time in the kitchen! Ingredients: 1 head of lettuce 1 can black beans, rinsed and drained 2 chicken breasts, grilled and shredded 1/4 red onion, diced 1 avocado, diced 1 cup corn kernels 3 hard boiled eggs, sliced 5 slices bacon, chopped 1 cup shredded cheese 5 tablespoons sour cream 2 limes, juiced (or 1/4 cup) 1 1/2 teaspoons honey 1 1/2 teaspoon olive oil salt and pepper a dash of hot sauce tortilla chips Cook and shred your chicken, boil your eggs, and fry up the bacon. Make your dressing: sour cream, lime juice, honey, olive oil, salt, pepper and hot sauce. Then start layering the salad with chips, lettuce, chicken, bacon, red onion, avocado, corn, cheese, and egg.
