Spaghetti “Olio, Aglio e Peperoncino”….and smoked salmon!
Caroline is still partying wildly up in London and so I am still all alone here, so tonight, as both Oscar and Poppy deserted me in preference to members of the opposite sex, I had something of a girlie night in. I had an early bath, read Waitrose Magazine, phoned friends, had a nice Punt e Mes and soda…. all in the bath, and then put on pyjamas, furry boots and chinese silk dressing gown, and probably looking like something precariously between a scream and a fright, minced downstairs to cook myself some dinner ! A simpler pasta dish you cannot get….Olive oil, loads of garlic, a generous helping of Chilli flakes and spaghetti. Fry the garlic lightly in the oil… don’t colour it for heaven’s sake….add the chili flakes. Voila! I add some parsley as well and then just stir in the spaghetti when cooked. Then add a generous scraping of parmesan cheese. One mistake I made. I added frozen chopped garlic, and frozen fresh parsley. Of course these ‘melted’ in the pan and therefore added a tiny amount of water, and thus diluted the sauce. Strangely quite noticeable. But wonderful nevertheless. Oh, I almost forgot. Lidl bought Smoked salmon fillet, which I heated up by perching it, in it’s container in the boiling pasta water. It was delicious…Lidl really are bringing out some cracking things at the moment….. Squeezed 1/2 glass of the Sauvignon Blanc from last night. This wine is a real, real find…for the price it is amazing. It’s called ‘The Watcher” (strange, but true !) Espresso and a home made Limoncello followed. No dog photo tonight…she’s out for the count on account of a long walk on what has been a truly beautiful island day here on the Isle of Wight!
