Spicy Bhindi ( Okra ) Fry
Spicy Bhindi ( Okra ) Fry Ingredients 250 g bhindi ( okra ), cut into 1 - inch pieces 1/2 teaspoon fennel seeds ( saunf ) 1/2 teaspoon mustard seeds 1/2 teaspoon fenugreek seeds 1/2 teaspoon onion seeds ( kalonji ) 1/2 teaspoon jeera ( cumin seeds ) 2 onions, sliced fine 1 teaspoon ginger - garlic paste 1/2 teaspoon dry mango powder ( amchur powder ) 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder Oil for frying Salt to taste Method Heat the oil in a deep kadai / frying pan and deep fry the bhindi till they turn brown and crisp. Drain and keep aside. Heat one tablespoon of oil in another pan and add the fennel, mustard, fenugreek, onion seeds and cumin seeds. When they begin to crackle, add sliced onions, ginger - garlic paste and saute till the onions become translucent. Add the salt, turmeric, chilli powder and dry mango powders. Stir - fry till the raw smell of the masalas disappears. Mix in the ladies fingers. Cook until well blended on a low heat. Garnish with fresh coriander leaves and serve as a side dish.
