Spicy cashew nuts with coconut ( Sri Lankan cuisine )
Ingredients 200 g cashew nuts 1 medium - sized onion 2 pods of garlic 1 ? piece of cinnamon stick 3 cloves 1 teaspoon peppercorns 1 tablespoon cumin seeds 2 tablespoon cooking oil Salt to taste
2 tablespoon desiccated coconut Method Roast the cumin seeds and grind to a powder. Dry roast separately and also powder the peppercorns, cinnamon and cloves. Cut onion lengthwise. Heat oil in a pan . Fry the onion till golden brown. Add cashew nuts and fry on a low heat for about 4-5 minutes. Add all the powdered spices , salt and desiccated coconut and mix well.
