Spicy Citrusy Chicken with Bell pepper
Need I say anything more, Its a citrusy and spicy dish. The flavors of orange juice and fresh lime juice really go well with Chicken, and add to that the heat of Jalopeno peppers and the freshness and earthiness of Cilantro. Ingredients: 1 pound boneless and skinless Chicken breast2 cups yoghurt1/2 cup orange juice1 cup onion chopped4-5 cloves of garlic1 one inch piece of fresh ginger chopped 1 cup tomatoes chopped2-3 Jalopeno peppers 2 tbsp Black raisins1/2 tsp turmeric powder1 tsp red chilli powder1 tbsp cumin-cilantro powdersalt to taste1 tbsp olive oil2 tbsp butterfresh Cilantro chopped3 tbsp fresh lime juice1 green bell pepper cut into long strips ***If you are unable to get Jalopeno peppers, you could use the green chillies(hot) as well.Preparation : In a bowl marinate chicken (cut into 2 inch pieces) with yoghurt,orange juice, turmeric powder, red chilli powder, cumin-cilantro powder and salt. Keep this aside for 15 to 30 mins.In the meanwhile make a puree of onions, garlic , ginger and jalopeno peppers. Do not make a fine paste, just grind it coarsely. Also make another puree of tomatoes.Heat oil and butter in a thick bottomed pan. Add the onion pureed mixture. Saute until you no longer get the raw smell of onion and garlic.Now add the tomato puree and saute for about 2-3 minutes or until its almost cooked.Add the marinated chicken kept aside along with the marinating liquid and fry for about 2-3 minutes. Add the raisins. Cook covered for about 15-20 minutes on medium heat until cooked.In the meanwhile, shallow fry the Bell Pepper Strips. Keep it aside. Once the chicken is cooked, add the fried Bell pepper and let it cook for a minute.Take it off the heat and add fresh lime juice and freshly chopped Cilantro.Serve with any Indian bread or Jeera(Cumin) Rice.related searches : Spicy
