Spicy Dry Lentil Powder/Idli-Dosa Powder
This Recipe is from my Massi(my moms sis)who stays in South India .Though She too is a Rajput they have idlis/dosas/appams for there daily breakfast.And she stores this powder in Big Big Jars and still its nt sufficient and she makes another batch ..haha..They hv this chutney almost with everything...My mom bought a ziplock full with her when she visited us last year.and i was like wow.and after tht batch was finished i started making mine.There r different versions of making this chutney skipping/adding some ingredients or quantity wise..This is how we make and I Love the Flavours and I prefer eating mine with yoghurt or as a side with Dal-Rice...Lipsmacking... Whole Dry Red chillies, with stems removed -20-25 1/2 cup split black gram (urad dal) 1/2 tsp mustard seeds,1/2 tsp Fenugreek seeds,1 tblsp Coriender seeds(optional) 1/2 cup bengal gram (chana dal) 1/4 cup Toordal(Split Pigeon Peas) 1/4 cup Dry grated Coconut 3 tblsp each of Sesame seeds and Peanuts(optional) Curry Leaves-15-20 or more Garlic cloves-10nos(thinly sliced)..skip it if u dont like the garlic flavor Tamarind-1 grape size ball Jaggery-1 grape size ball..optional 1/4 tsp asafoetida salt to taste Oil-1 tblsp Method- First Dry roast Sesame seeds,coconut,peanuts separately til they turn brown.keep aside and take the skin off from peanuts. Secondly Wash and pat dry the curry leaves. In the skillet, heat a tblsp of oil add mustard,methi seeds followed by dry chillies,chana dal,urad dal,toordal.Fry for 3-4 mins Add coriender seeds ,curry leaves and fry til the curry leaves turn crisp.Add garlic and fry for sumtime.Saute all the ingredients together until the lentils turn aromatic and nicely browned.Add Asafoetida,Tamarind .mix well.Remove and Let it cool (or it wil hv lumps) Now add salt,jaggery and then blend in a food processor to a powder along with roasted sesame,coconut and peanuts... Store in an air tight container and Dip Hot idlis in this flavorful dry chutney and enjoy ..Sprinkle on ur Dosa,or just mix with some sesame oil/ghee and enjoy with curd rice/steamed rice..
