Spicy Pork Quesadilla-Tacos
Here is the last of my pork dishes made with the leftover braised pork. I made thin quesadillas stuffed with poblano peppers, then folded them like a taco shell. I finished them with classic taco toppings, and it was delish! Spicy Pork Quesadilla-Tacos Served 2. Leftover Potential: Made with leftover pork – used leftover tortilla and cheese to make huevos rancheros (post to follow). 2 Tbsp oil 1 1/2 cups shredded pork 1/4 cup salsa 8 tortillas crumbled queso fresco 2 roasted poblano peppers, roughly chopped minced red onion thinly sliced radish cilantro leaves 1. Heat the oil in a large saute pan. Add the pork and saute until it crisps slightly, 3-4 minutes. Stir in the salsa. Keep warm. 2. Assemble the quesadillas with cheese and poblanos. Cook the tortillas over medium high heat until the tortillas have lightly browned and the cheese has melted. Press them down firmly so that they are very thin. 3. Fold the finished quesadillas in half and fill with the pork. Garnish with red onion, radish, and cilantro.
