Spicy Sprouted Green Gram ( Moong) Usal / Hesaru Molake Palya

The ingredients in this recipe provides Energy, Proteins, Invisible Fats, Vitamin B1, Vitamin B2, Vitamin C, Vitamin A, Folic Acid, Iron and Fibers. Faulty cooking destroys valuable nutrients from the food. Therefore to retain maximum amout of nutrients in the dish, I cook it in the pressure cooker. Ingredients 1 cup sprouted moong / green gram 2 finally chopped large size onions 2 finally chopped medium size tomatoes 1 tsp.Cumin seeds/whole jeera 3 basil leaves 2 tsp. oil (you can use 2 tbsp. oil. Peanut oil is good) Salt to taste For the masala paste: 3 garlic cloves 1/2 inch ginger 4 tsp. red chilli powder (adjust as per your taste) 1/4 tsp. turmeric powder 1/2 tsp.whole black pepper 1 inch Dalchini / Cinamon 3 Lavang/cloves 1 tsp. coriander and cumin seeds / dhania and jeera powder Grind all the ingredients to a coarse paste. Method : Soak sprouted moong in water for one hour and remove the husks. Heat oil in a kadai , add onions and fry till they become very soft. Then add basil leaves, masala paste, tomatoes and salt. Fry for 2-3 minutes. Now add whole cumin seeds, sprouted moong , fry for 3-4 minutes. Add one cup water. Pressure cook till they become very soft. When the pressure goes down, mash the sabji slightly with the spoon. Simmer for 5 minutes and serve hot. This sabji goes well with chapati and rice.
