Spinach Almond Dip
It was movie night at our house. We decided to have a special snack. My family enjoys different varieties of dip. I was looking for something different. I wanted something other than my boys’ favorite french onion dip. I looked through a few cookbooks and couldn’t quite find a recipe that suited me. However, I found inspiration in Martha Stewart’s recipe for Cilantro Almond relish. Her cilantro relish recipe is featured in her book I took the rest of my creation to work the next day and four ladies that I adore sampled it, ate every drop and suggested serving it with lime tortilla chips. Everyone needs a “test kitchen”.
Spinach Almond Dip Ingredients: 1 c toasted sliced almonds 4.5 oz fresh spinach 2 tsp minced garlic ½ c fresh lemon juice ½ c sour cream ¼ c mayonnaise 1 tbsp hot sauce Method: Heat oven to 350°F. Place the almonds on a baking sheet and toast until golden. This will only take about 3-4 minutes. Do not take your eye off of the almonds. After toasting, immediately remove the almonds from the baking sheet and place in a bowl and cool completely. In the bowl of a food processor, combine the almonds, spinach and garlic. Process until the spinach, almonds and garlic are well blended and resemble a paste. Add the lemon juice and process until combined. Add the sour cream, mayonnaise and hot sauce.
