Spinach Dip
My love of dips should be no mystery by now. First, there was the Spicy Sausage Dip, which has been loved in my household since the first time I made it, and the subsequent ten times after that because I couldn't STOP making it and scooping into it with a handful of tortilla chips. And then there was the Caramelized Onion Dip, which I found out, though still very yummy with a wavy Lays chip... or a hundred, has a more limited following, leaving me to dump a good cup-and-a-half of leftover dip down the drain. Sigh. So, why do you need another spinach dip recipe, you may ask? Because this one is the BEST! This is the most flavorful, ooey-gooey, creamy, scrumptious spinach dip you will ever taste, and because I've made it many, many more than ten times, it's been developed to perfection so you know it's good! Ingredients 2 tbsp. extra-virgin olive oil 6 oz. baby spinach 8 oz. light cream cheese 2 cups shredded mozzarella cheese 1 cup grated parmesan cheese 1 cup sour cream 1 egg 5-6 cloves garlic, minced Salt and pepper, to taste Directions Preheat oven to 375 degrees. Blend together cream cheese, mozzarella cheese, egg, parmesan, and sour cream with an electric mixer on medium speed, about half a minute. Add olive oil to a large, shallow pan and set to medium heat. Sautee spinach with minced garlic, until both are soft. Season lightly with salt and pepper. Add the spinach and egg to the cream cheese mixture, and blend with electric mixer on medium speed for about 15 seconds. Add salt and pepper. Line a shallow dish with aluminum foil and pour in the spinach dip. Sprinkle with mozzarella cheese and parmesan. Bake for 15-20 minutes. Enjoy! related searches : Spinach
