I just started this post out 'Happy Hump Day.' It's THURSDAY! I started my day with a 4 mile run. I've been running without my Forerunner lately and it's been quite nice. It feels freeing to run without having my pace and mileage beeped at me. After getting my sweat on, I had this nice cold bowl of cereal:
Love sprouted grains! Work wasn't too exciting this morning. I actually don't really remember anything from this morning.... I do remember lunch though. It started like this: After a pressing on the panini maker Foreman: Plus broccoli, celery and roasted red pepper hummus. That hummus is the Athenos brand. Sabra > Athenos. I don't know how Sabra does it, but their hummus is so good. The ratio of ingredients is perfect. While I snapped my lunch picture: I don't know where Biddy was (the black dog), and I probably don't want to know. All I do know is that when I let the dogs back into the house, Biddy was soaking wet. And the sun was shining bright. And none of my neighbors had their sprinklers on. For all I know she jumped in my neighbor's pool. For dinner, I made a sauce of apricot preserves + dijon mustard + fresh rosemary: The rosemary is from my garden. I neglected my herbs all winter long, but now the parsley, oregano and rosemary are back with a vengeance. Sadly, my basil has not returned, and I don't think it's going to. Self, buy a basil plant pronto. Anyway, I put the sauce on some chicken and baked it in the oven. Looking back I should have just served the sauce along side the baked chicken. I also used my spiralizer: to make curly sweet potato fries: I baked them for about 20 minutes or so at 375. They were as delicious as they look. All together my dinner plate looked as such: And with that, I'm heading to bed! OH, and guess who my best friend met last night? The Pioneer Woman! PW even tweeted Brittany!? I'm cool by association!
