Ingredients:
4 Eggs
2 cups spinach, chopped fine
2 large potatoes, boiled
1/2 cup Cheddar Cheese
1/2 cup Milk
1 tsp Black pepper
1 tbsp Olive oil
1 tsp Mustard paste
For the tomato Sauce:
4-5 Large tomatoes, chopped
1/2 tsp dried basil, oregano, nutmeg each
1 tsp Black Pepper
1 tsp Salt
1 tbsp Olive oil

Preparation:
step 1
First prepare the mashed potatoes. mash the boiled potatoes, add salt to taste and mustard paste. Mash it really well, then pour in the milk and mash it again with your hands or whisker. Do not use any ind of blender to mash potatoes or they will get really mushy. We just need a coarse mash.

Next, heat oil in a sauce pan and add the chopped spinach into it. Just cook it for 2 min covered, till it gets wilted. Let it cool for a min and keep aside.

For the tomato Sauce, eat Olive oil in a pan, Fold in chopped tomatoes, cook over medium flame for some time till it gets mushy and fragrant.
Add in the herbs and spices, stir well, pour in enough some water and cook covered for 10-15 min. By this time, the tomatoes will get all mashed up and you dont need to puree them separately. But if you must, only pulse it once or twice after the sauce is completely cooled down.

Now, In a greased Gratin dish, first spread the mashed potatoes evenly with a spoon. On top of it spread some cheese and then wilted spinach.
Next layer tomato sauce evenly and spread it well. Make four holes in the dish by swirling a fork or spoon.

Pour in the eggs in these nests and sprinkle cheese on rest of the area. Immediately place into the preheated oven at 180 Degrees for 10-12 minutes or untill eggs get just set. Plz dont over bake them to avoid get burnt.

Cut into squares and Take each egg out and enjoy !!
