Ingredients:
1 medium size (abt 130g) carrot - grade to a raw coarse either in a food processor or grater
4-5 pieces of salad leaves (any type you prefer) - shredded
1 (60g) red onion - chopped
2 tbsp roasted sesame seeds
1 tbsp olive oil
1/2 tbsp crushed black pepper
salt to taste

Preparation:
Soak the grated carrots and salad leaves in a bowl of ice water as this will create a crunchy taste to the veg.
After about 10 mins, drain and ensure all the water is squeezed out.
Toss all the ingredients together and the salad is ready.
Serve immediately, if not the salad becomes soggy and watery.
