Ingredients:
1 wheel of Brie cheese
2 sheets of prepackaged pate brisee pastry
1 egg, beaten
1/2 lb mushrooms, finely chopped
1 small onion, minced
1/2 tsp ground nutmeg
1 tbsp Sherry or port
2 tbsp butter.

Preparation:
Using one sheet of the pastry, cut out a circle, using the brie as a guide. Also cut 4 mushroom shapes with a pastry cutter. Set aside.
Halve the brie horizontally and set aside.
Saute the onion in the butter until soft. Add the mushrooms, nutmeg and sherry and continue cooking until all liquid has evaporated. Set aside.
Place the brie bottom in the middle of the second sheet of pastry, cover with the mushroom mixture and top with the other half of the brie.
Pull the entire sheet over the brie, press on top the precut circle and decorate with the pastry mushrooms.
Bake for 20 minutes in a 425 degree, preheated oven.
