Ingredients:
2 big yellow onions (sliced into rings)
2 -3 slices of cheddar cheese
For The Batter
1/2 cup cake flour
pepper (as needed)
chilly flakes (as needed)
salt to taste
milk (as needed)
1 egg white (whisk until a soft peak forms)

Preparation:
Mix the flour, pepper, chilly flakes, salt and enough milk to get a light batter (not too watery either).
Dip the onion rings one by one into this batter and then into the egg white.
Fry in batches until dark brown in colour.
Place the fried rings into a baking pan. I used 2 different pans, one round and the other square.
Tear the cheese into pieces and place in between and on top of the rings.
Bake at 200c for 10-15 mins.
Remove from pan and serve with a dipping sauce.
