Ingredients:
3 medium (abt 340g) potatoes - cut into medium size stripes with the skin on
100g peanuts
1/2 tbsp chilly flakes (or as needed)
5 shallots - sliced
1 1/2 tbsp sweet soy sauce
1 1/2 tsp rice flour
1 stalk spring onion - shredded
salt and oil - as needed

Preparation:
Mix some salt and the rice flour into the potatoes.
When oil is heated, deep fry the potatoes and keep aside.
Do the same for the peanuts.
Leave just 1 1/2 tbsp oil in the same wok/pan.
Saute the shallots to soften.
Add in the soy sauce, chilly flakes and salt to taste (use sparingly).
Mix to stir in all these ingredients.
Once the sauce thickens up, combine the potatoes and peanuts in.
Off the heat and add the spring onions, one good stir and remove from heat.
