Ingredients:
500g pumpkin - remove skin, cubed, boil with enough water to a soft and tender texture.
6 shallots - sliced
5 garlic - chopped
1 cup milk (carton/fresh milk)
3 tbsp olive oil
coriander leaves for garnishing
salt and pepper to taste

Preparation:
Add the boiled pumpkin into a blender/processor.
Process to a thick puree. Add water if needed.
Heat oil and fry the garlic to a crispy brown level.
Add shallots and continue to fry for another 2-3 mins.
Pour in the pumpkin puree and let it simmer.
Once done, pour in the milk, salt and pepper to taste.
On a boiling point, remove from heat.
Garnish with coriander leaves before serving.
