Ingredients:
250g purple cabbage - shredded
1 medium size (abt 90g) tomato - sliced into thin pieces
4 tbsp grated coconut
5 shallots - sliced
salt to taste
3 tbsp olive oil

Preparation:
When oil is heated, saute the shallots for about 3-4 min.
Add all the other ingredients and stir to soften the cabbage.
Since I wanted the cabbage to be crunchy, I just fried it for about another 3-4 min.
