Road trips, organic cows, eating raw, and packing
I feel like I?ve had something major every weekend of my summer break so far! First a little recap of some good eats. I?ve been craving summer salads lately, and fortunately for me, my mom keeps a well-stocked fridge full of fresh veggies. My sister loves artichoke hearts on salads, which are also pretty good. The only thing this salad was missing?.guacamole!
My mom decided to cook steaks for dinner last week. I hardly ever eat red meat, so this was a treat for me. We buy our meat from an Amish family who does not feed their cows hormone-containing feed and treats their animals humanely. In light of the Food, Inc. movie {which I still have yet to see!}, I think this fits in, no? The cows are considered ?organic? cows, and their meat is not processed in a big plant like the meat you get in a grocery store. Thoughts, anyone?
I saw a pretty eggplant at the grocery and decided to make eggplant parmesan on couscous. It turned out really well, even if it?s not exactly the most beautiful dish you?ve ever seen.
I tried my first raw meal last week! I whipped up Gena?s zucchini marinara, and it was really good. If you expect it to taste like spaghetti, you might be disappointed, but I just told my family that it was a raw concoction, and they enjoyed it. I will definitely not be eating raw all the time, but I?m not opposed to trying new things or finding creative ways to increase my vegetable consumption.
This past weekend, I drove to Indy to visit two of my close friends from college. We had a lot of fun hanging out and catching up on each other?s lives. We ate at Uno?s, and I had a vegetable quesadilla, which was pretty good but a little greasy. I especially enjoyed the guac that came with it.
We had grilled chicken, salad, baked potatoes, and strawberries, and my friends were excited to learn the definition of a blog worthy meal.
Here we are in downtown Indy. Of course my eyes are shut in every picture we took that day. Joy.
We went to a cute place called The Chocolate Cafe, which had tons of different chocolate eats?. ?and a giant bear in the corner.
I got some dark chocolate covered pretzels, and they were amazing.
I?m currently in the middle of packing up all of my stuff in Columbus and getting ready to move to St. Louis. I?m honestly really tired of moving! It?s really stressful to pack up your life and find new grocery stores and a new church, say goodbye to friends, and figure out all the highways and ins and outs of cities. I guess it?s just one of life?s adventures, though. Tonight, I?m having dinner with Gina and some nutrition friends. It?s supposed to be a 60?s theme. Any ideas for outfits from that era? I?ll be back to commenting on blogs soon! Right now, my first priority is to get packin?! Hope everyone has a great week!
