Ingredients: 1 clamshell baby spinach; 1/3 cup julienned sun dried tomatoes, drained; 1 cup whole wheat couscous, seasoned with garlic powder, salt, pepper, drizzle olive oil; ½ red onion, diced; 1 can (14 oz) artichoke hearts, diced; 1/4 cup sliced kalamata olives; 1 roasted red pepper, diced; 3 TBSP Extra Virgin Olive Oil; 2 TBSP red wine vinegar; ¼ tsp pepper; 4 oz crumbled feta cheese

Ingredients

1 clamshell baby spinach
1/3 cup julienned sun dried tomatoes, drained
1 cup whole wheat couscous, seasoned with garlic powder, salt, pepper, drizzle olive oil
½ red onion, diced
1 can (14 oz) artichoke hearts, diced
1/4 cup sliced kalamata olives
1 roasted red pepper, diced
3 TBSP Extra Virgin Olive Oil
2 TBSP red wine vinegar
¼ tsp pepper
4 oz crumbled feta cheese

Cook cous cous as directed. Combine all other ingredients, excluding feta cheese, and toss.
Add hot cous cous to salad and toss together.
Sprinkle feta cheese on top. Serve warm.
