Super bowl specialty-- bruschetta!!

Ingredients: Ingredients: * 1/2 pound ripe tomatoes, seeded ( I used the baby tomatoes) * 4 tablespoons extra virgin olive oil * 1 tsp Balsamic Vinegar * 1 teaspoon salt * Some freshly ground black pepper * 3 tablespoons finely chopped fresh basil * Some Mozzarella Cheese ( I used the shredded one) * 1 medium baguette, French or Italian bread cut into 1/2 inch slices. |
Preparation: Method: 1.Prepare the tomatoes first. Parboil the tomatoes for one minute in boiling water that has just been removed from the burner. Drain. Using a sharp small knife, cut the tomatoes in 1/2 inch pieces and remove seeds. 2.Combine all relish ingredients except the Mozzarella cheese in a small bowl. 3.Stir well and taste for seasoning. 4.Put 2 tbsp of Olive Oil on a pan and toast the bread slices from both sides. 5.Remove and arrange the prepared bread on a baking dish. 6.Spoon mixture over each bread slice and drizzle the remaining 2 tablespoon extra virgin olive oil over top. 7.Add a little mozzarella cheese on each slice and toast in a preheated oven (400 d F) for 2-3 minutes or until cheese is melted. 8.Sprinkle with freshly ground black pepper and serve. Serves 6-8 for appetizer |
