Ingredients:
eggs
1 red capsicum - remove seeds and cubed into small pieces
2 white firm tofu - cubed into small pieces
1 (about 80g) onion - chopped
2 spring onions - sliced thinly
2 tbsp of oil
salt and pepper for seasoning

Preparation:
While oil is heated, lightly fry the cubed tofu and remove.
Into the same oil, sweat the onions for a couple of seconds.
Add in the eggs and seasoning.
Scramble very quickly and all the rest goes in.
A couple of good stir before removing from heat.
