![]() Steamed Hammour in Banana Leaf Cuisine - Arabic Dish - Main Courses Serves -4 Ingredients 1 kg hammour fillet, without skin, cut into ?bite-size pieces ?1 banana leaf, minimum length 40cm ?Salt and pepper, to taste? Blend together: ?80g tomatoes ?40g ginger, peeled ?35g galangal, peeled? 50g turmeric, fresh? 30g chilli, large? 25g garlic, peeled? 60g shallots, peeled? 10g candle nuts, crushed ?10ml tamarind juice Method Marinate fish cubes in the blended mixture ?for 30 minutes. Place the mixture in the centre ?of the banana leaf and wrap it up. Secure with bamboo skewers. ?Place the wrapped hammour into a frying pan, add water to a depth of approximately 1cm depth.
