Stirfry-Sweet and Spicy Lentils with Spring Onion(Scallion/Green Onion)
Lentils r my family fav...we add mostly to every veggie like bottlegourd,ridgegourd,squash,cabbage and so on. My mom makes this dish with just green onions and yellow moong dal...i just added some veggies and raisins..and it tasted sweet and little spicy...yum U need- 2 bunch of spring onion/scallion/green onion/salad onion..,,chopped any veggies u prefer(i used corn,green bell pepper and zucchini) garlic-6-7 chopped moong dal(split yellow lentils)-1/2 cup washed and boiled til 80% done onion-1/2 sliced Green chillies-2 chopped coriender-cumin powder-1 tsp 1/4 tsp turmeric powder garam masala powder-1/2 tsp or less 1tblsp or more Black raisins salt/pepper as per taste juice of 1 lemon 1tblsp of oil and mustard seeds for seasoning Method : Cut and remove root from spring onions and any hard outer layer from it. Wash and chop the bulbs as well as the leaves and keep it aside. Heat a tblsp of oil, when hot add mustard seeds. When it starts to pop add garlic,green chillies...saute for a min,add onion, and saute on med high ,add turmeric powder ,srir and add veggies(zucchini/corn) Saute it for few minutes..add spices and lentils...stir fry add spring onion,bell pepper ,raisins, salt/pepper.saute on high for 2-3 mins..sprinkle some water if u like little mushy... Switch off the flame,squeeze lemon juice.serve. Tastes good with chapathis(indian wheat flour tortilla)/steamed rice.
