Stuffed Capsicum Tawa Fry

Hello folks. Am back with an interesting side dish...Stuffed Capsicum Tawa fry. Stuffed Capsicum may not sound new. It could be one of those "been there done that" dish for almost everyone :-) What is interesting about this one is the way they are prepared. There's a slight twist to the way we cook Capsicum here. These could very well be part of a Kabab platter and served with Mint chutney and Onion rings. Do try these and let me know your inputs.

Ingredients:
4 big Capsicums

For Filling
6-8 Medium sized Potatoes - Boiled and peeled
1 tsp chopped Ginger
1/4 tsp Red Chilli Powder
1 tsp Coriander powder
1 tsp Garam Masala
a pinch of Asafoetida
Salt to taste

3-4 tbsp cooking oil
Chat masala to sprinkle

Method:
For Potato stuffing
Heat 2 tbsp oil in a wok. Add Asafoetida. Add Coriander Powder, Red Chilli Powder and GingerMash Potatoes with hands and add to it. Add Salt. Stir to mix. Mash big lumps with the spatula.Cook the potatoes uncovered for some 5 minutes till the mashed Potatoes come together as a mass.Add Garam Masala. MixSet aside to cool, uncovered.Note: Though cooking the boiled Potatoes is an optional step, I do this so that the spices are blended in the filling and extra moisture is taken off.

For Capsicum

Slit the Capsicums into vertical halves and deseed them. Microwave them, covered, for 3-4 minutes till the capsicums become softer and discoloured yet slightly firm to hold the filling. Drain and cool.Fill the Potato stuffing into Capsicum. Don't be tempted and fill it to the brim (as I always tend to do :-)) Capsicum's skin will shrink when cooked. If they are overstuffed, the stuffing will tumble out later.Heat a non-stick griddle. Pour a few drops of oil. Place the stuffed Capsicums on the griddle and cook on low heat.Press the Capsicum with spatula once every few minutes, to flatten them. Don't worry if the Capsicum skin gets a little over done. It is supposed to have that grilled effect.Pour a few drops of oil on the top and flip to bring the Potato side down. Press the Capsicum with spatula once every few minutes. Cook till Potato side is golden brown and crisp. Sprinkle loads of Chat masala on top.Serve hot with Chapati and Dal.
