Stuffed Chicken Breast

This is a stuffed chicken breast I made for my family. I had been wanting to try to make this for a while but didnt have a meat mallet so when I got one for my birthday i made it right away :)

To figure out how to make the chicken I just googled stuffed chicken breast and got some ideas then I made my own variation. A lot of recipes were for feta stuffed chicken breast or spinach stuffed chicken breast but I didn't have any of that stuff on hand so I used mashed potatoes. I pounded the chicken so it was flat then made the potatoes (potatoes mashed and mixed with butter, sour cream, garlic, parsley, oregano, and some oter spices) then I put a spoonful of poatoes on each breast and rolled them up, then put a toothpick through them to keep them together. I then sprinkled some salt and pepper on the rolled up chicken breasts and baked them on a baking sheet til slightly brown and no longer pink.

I served them on a bed of the same potatoes and with a side of steamed broccoli. It was pretty simple and VERY tasty. :D
