Stuffed Green Chilli Pickle, Amle Ka Achar & Karela Ka Achar
Stuffed Green Chilli Pickle Ingredients 500 g big size green chillies 2 1/2 teaspoon salt 2 teaspoon red chilli powder 1/2 teaspoon black salt 2 tablespoon coriander powder 1 tablespoon garam masala powder 1/4 teaspoon asafoetida 1 teaspoon amchur ( dry mango powder ) 2 tablespoon mustard powder 1 tablespoon turmeric powder 1 tablespoon aniseeds ( pounded ) Mustard oil Method Bind masala by adding just enough mustard oil. Make a cut in each green chilli and fill the masala. Store in an airtight container. It will be ready within 3 days. Amle Ka Achar Ingredients 1 kg amla ( gooseberry ) 1 1/2 teaspoon turmeric powder 2 tablespoon salt 2 teaspoon kalonji 3 teaspoon red chilli powder 4 tablespoon aniseeds ( pounded ) 1 tablespoon mustard ( rye ) powder 5 tablespoon mustard oil Method Keep amlas in hot water for 10 minutes. Drain out water and dry them in the sun. With a fork prick all sides of the amlas. Mix with all the masalas and oil. Store in a glass jar. Karela Ka Achar Ingredients 500 g small size karelas ( bitter gourd ) 1 tablespoon salt 1 teaspoon turmeric powder 4 teaspoon aniseed ( crushed ) A pinch of asafoetida 3/4 teaspoon red chilli powder 2 tablespoon mustard powder Mustard oil for frying Method Peel and rub salt on karelas. Wash and make a cut in the centre. Dry them in the sun.
Heat oil in a pan / kadai. Fry karelas till light golden in color. Cool and put them in a bowl. Add all the masalas and a little more oil if required. Store in an air tight container. related searches : Stuffed
