Stuffed n Roasted Indian Bittergourd(Bharwa Karela Fry)-Version1

My mom makes Bittergourd in no of ways with just lentils powder mixture,with nut mixture,with peanut powder,with the skin and seeds itself ,with potato mixture,simple onion -tomato mixture,coconut -sesame seeds-tamarind-jaggery mixture,chickpea mixture,garam masala mixture and no of  creative dishes deepfried,roasted.,stirfrys and curries. wil share the others with u  all soon...

U need-
5 karelas(Indian Bittergourd/Bittermelon) washed and skin scraped off
¼ cup chana dal.
dess.coconut-2 tblsp,curry leaves-few crushed,cumin seeds-1/2 tsp
1 medium onion, chopped,1-½ tablespoons ginger garlic paste
¼ teaspoon turmeric powder,½ teaspoon red chili powder,1 tsp coriender-cumin powder,
1/2 teaspoon garam masala powder,¼ teaspoon dried mango powder(amchoor),salt..to taste
2 tablespoon cilantro,chopped,Toasted cashewnuts-1 tblsp chopped
Thick Tamarind-jaggery pulp-1 tblsp
Oil-2-3 tblsp..as reqd,Ghee-1tsp
Chat masala powder and lemon juice to garnish.






Method-
Wash karelas and scrap off the skin with spoon.Make a lengthwise slit on the karelas. Sprinkle / rub salt generously and keep aside for an 5-10 mins.Scrape the seeds out of the karela.discard.
(I sauted the seeds and skin in little oil and used to make chutney.)

Optional step-To remove bit of bitterness -
In a saucepan add some water,lemon sized tamarind,1 tblsp jaggery,3-4 black peppercons,3-4 mint leaves,1/2 tsp black salt,1/2tsp cumin seeds ,2-3 garlic pods ,1/2 tsp grated ginger and bring to a boil.add karelas and boil til 80% cooked...remove on paper towel and pat it dry.Strain the water and drink as this bitter juice is packed with nutrients.It tastes sweet,sour,bit bitter and hot..yum...can skip this step and soak karelas instead for 1/2 hr  in lemon juice and salt water.

Wash,soak,fry and cook Chana dal-
In a bowl wash the chana dal thoroughly. Then soak it for at least 30 mins.Remove all the water,pat it dry on a towel.
In a pan, add 1 tsp of ghee and fry the dal til aromatic and is slightly brown..
Pressure cook or boil the chana dal in enougth water with pinch of turmeric,hing,dash of oil and 1/2 tblsp of ginger garlic paste.cook til 90% done.

In the same pan add 1 tblsp oil and add hing,cumin seeds,as they splutter add crushed curry leaves,onions..fry til translucent and add 1 tblsp ginger garlic paste.saute til onion is light brown in color,add coconut,fry again til brown,add spices(turmeric,coriender-cumin powder and red chilly) mix well.add cilantro and chana dal and salt.mix well and cook for few minutes til dal is fully cooked.sprinkle some water if the mixture is sticking to the bottom.add mango powder and garam masala powder...mix well..Turn off the heat .Take out in a bowl.

In the mixture add tamarind-jaggery pulp and cashewnuts.mix well and stuff the karelas with this mixture.tie it with thread and saute on hot skillet til brown and roasted.Remove,squeeze lemon juice and sprinkle chat masala powder.
Serve warm with rice dishes/rotis
