Sugar Cookie Sandwiches

Sugar cookie sandwiches are an easy way to add interest to basic sugar cookies without a lot of extra work decorating. For a simple sugar cookie recipe see my post for Cookies For A Cause: Easy Roll Sugar Cookies. For the frosting I used my recipe for Chocolate Cream Cheese Frosting, but a quick alternative is ready-made frosting.
