Sugar Free Cereal Treats
So my nemesis is the sugar free cereal treats. Most recipes use marshmallows?which I can?t use because of the sugar thing. Until I can figure out how to make a sugar free marshmallow that will work in these recipes I have to go with other options. I was craving some sort of sugar free cereal treats so I raided my pantry. I saw the Muddy Buddies Recipe on the Chex box and this is what came from it. If you?d rather make the regular sugar version here is where you can find it: Muddy Buddies P.S. Not only are these Sugar Free cereal treats, they also have NO artificial sweeteners either.
Sugar Free Cereal Treats Ingredients: 8 cups Corn or Rice Chex cereal 2 cups Grain Sweetened Chocolate Chips, Sunspire makes some, found in Whole Foods and King Soopers. 1/4 cup peanut butter 1/4 cup honey 1 tsp. vanilla 2 cups almonds dash of salt
Directions: In a food processor or blender chop the almonds. Chop until a coarse powder. Set aside. Measure 8 cups of Chex cereal into a large bowl and set aside. In a medium saucepan combine your chocolate chips, peanut butter, honey, salt and vanilla. Try to resist the urge to just eat this with a spoon at this point?you will want to! Heat on med-low. Stir often. The melted chocolate will have a textured, grainy look to it. You want to keep heating/stirring until it becomes shiny and loose. Pour chocolate mixture over the cereal and stir until cereal is coated evenly. Work quickly. Because there is no fat like butter or oil added to it, it will set up quickly. Spread your mixture onto a wax paper lined baking sheet. Pour your chopped almonds over the top and fold in to coat the cereal. Let the cereal mix cool and then put in the refrigerator to firm up. Store in a sealed container in the refrigerator. These aren?t the prettiest of treats?but they are so yummy! related searches : Sugar
