Summer Coolers - Milk Shakes , Saffron Lassi, Iced Mango Cooler, Cocoa Chocolate Milk

Cocoa Chocolate Milk

You need

4 cups warm milk
1 ¼ teaspoon cocoa powder
1 tablespoon chocolate powder
1 tablespoon powdered milk
1 teaspoon coffee
1 cup cream
1 ½ tablespoon sugar
4 cubes of grated chocolate bar for garnishing

Method

Churn milk, chocolate powder, cocoa , sugar and coffee in a blender. Add powdered milk and churn again. Pour it into glasses.

Top it with cream and serve garnished with grated chocolate.


Milk Shakes

These can be made with the pulp of any ripe fruit like mango , banana , pineapple, apple etc..( except citrus fruits ) .

You need

1 litre boiled and cooled milk
2 cups pulp of any fruit
½ cup sugar
A few drops of essence ( optional )

Method

Mix the ingredients in a mixer and keep in the fridge. Makes 4 ? 6 glasses.

Saffron Lassi

Makes about 3 cups

You need

2 cups ( 500 ml ) yogurt
1 cup ( 250 ml ) iced water
Pinch of saffron strands
1 tablespoon boiling water
2 tablespoon castor sugar
½ teaspoon ground cardamom
Ice cubes

Method

Combine saffron and boiling water in small cup ; let it stand for 5 minutes. Whisk yogurt, iced water, sugar and cardamom in large jug ; stir in saffron mixture. Serve lassi over ice cubes.

Iced Lime Cooler

Makes about 5 cups

You need

1 litre ( 4 cups ) water
2/3 cup ( 150 g ) castor sugar
1/3 ( 80 ml ) lime juice
1 teaspoon shredded fresh mint leaves
Ice cubes

Method

Combine water , sugar , juice and mint in large bowl, stir until sugar is dissolved. Cover , refrigerate for 4 hours or until well chilled. Strain lime refresher into jug, serve poured over ice cubes.

Iced Mango Cooler

Makes about 3 cups

You need

2 medium ( 860 g ) mangoes
36 ice cubes
1 tablespoon sugar

Method

Halve mangoes, discard seeds; spoon mango flesh into work bowl of food processor or into a blender. Process with ice cubes and sugar until thick and smooth. Pour it into serving glasses ; stand at room temperature for 5 minutes before serving.

Masala Chai

Make about 4 cups

Ingredients

2 cups ( 500 ml ) milk
2 cups ( 500 ml ) water
4 tea bags
Sugar to taste
2 cinnamon sticks
1 teaspoon fennel seeds
1 teaspoon cardamom pods, bruised
½ teaspoon cloves
1 teaspoon ground ginger
½ teaspoon ground nutmeg
½ cup fresh mint leaves

Method

Combine spices, mint and tea bags in teapot or heatproof jug. Bring combined milk and water to the boil, pour over spice mixture, stand for 10 minutes. Sweeten with a little sugar , if desired. Just before serving , strain.
