So tonight we had a couple of friends over for Sunday dinner. I wanted to try to make something with eggplant. I have only had it in Tempura and grilled and I wasn't really impressed. I have to say I absolutely loved this meal! The recipe calls for a whole bulb of roasted garlic..plus three more cloves when you start the stew, plus roasted peppers. They call for red peppers, but I used one orange and one yellow because I prefer the sweeter ones. The Poppy-Seed Polenta on top was the perfect compliment to this as well. Two words: No leftovers!
