Super Fajita Swiss Chard Burritos!
Thank you, Emeril, for finally giving the world some vegan and vegetarian recipes! I couldn’t be happier. I’ve been cooking up a lot of Emeril’s recipes lately. Here’s such an interesting take on a burrito…Swiss chard, wow! I love it anyway, so why not have it in a burrito. It really adds to the portion size too. In a nonstick skilled sprayed with oil spray, saute these ingredients: 12 oz. faux meat strips (I used Morningstar Meal Starters) 1 sliced red pepper 1/2 sliced red onion 1 seeded and minced jalapeno Saute about 6 minutes till softened. Season with: 1/4 tsp salt 1/8 tsp cumin 1/8 tsp chili powder 1/8 tsp black pepper Add in: 2 cups black beans 2 cups chopped Swiss chard Saute till chard is wilted. Serve with your favorite toppings and your favorite tortilla (add in the additional points). I used low carb tortillas from Trader Joe’s that were 1 point each. 8 servings.
