SUPERBOWL RECIPE: CROSS COUNTRY FAJITAS

Today I was in the International Food Market on Fulton Avenue. I picked up a couple of cans of dolma (stuffed grape leaves) & then I went over to the refrigerated section & grabbed a container of Jericho Classic Humus.

Then I started thinking about a killer meal. Everyone knows about the Tex Mex Food Scene & Fajitas. Right?

What about some cross country fajitas? It would be a blend of worldwide flavors. I have the ingredients & the time. What the hell, I think I will go for it!

Here's the game plan for my Cross Country Superbowl Fajitas & this is what I have to work with:

1. One 8 oz New York Steak, cut into thin slices.

2. 1/2 red pepper cut into thin slices

3. chopped lettuce.

4. chopped tomatoes

I will fry the steak & peppers in olive oil on medium high heat. Season with salt & pepper to taste. Fry until the steak is a Carmel color & the peppers are glistening.

Prepare the flour tortilla by spreading a thin coat of Humus on it. If you like, you can use horseradish or mayo. It's up to you!

Maybe add in some pinto beans or brown / white rice.

Roll up the tortilla with all the ingredients: Lettuce, tomato, humus, red pepper, steak etc.

Red rooster hot sauce?

Sound good?

It would be a blend of American, Mexican & Middle Eastern.

Have a few Dolmas on the side with some green olives!

If you are feeding a bunch of people for the game simply increase all of the ingredients mentioned above.

A few steaks, a few red peppers, more lettuce, tomatoes etc.

Set up a table with all of the ingredients & let your guests build their own fajita.

Hey it sounds better than chips & dip, right?

Have a good game. I don't know about you, but I have 4 squares in the office pool.

As for me, I can't wait, I'm off to the Kitchen to try this one out.
