Sushi!

Happy Thursday to everyone! I can’t believe my first full week of class is almost over, it has flown by! This semester is not going to be as bad as I thought :) After a busy day yesterday writing two papers and getting caught up on laundry I decided to spend some time unwinding in the kitchen trying something I have wanted to make for awhile now, sushi!


I love sushi. I would eat it all the time if I could afford it, but unfortunately I can’t. So I decided to attempt to master sushi making on my own in order to get my sushi fix whenever I please.  I watched this video which did a pretty good job of explaining step by step how to make vegetable rolls. Honestly making sushi was a lot easier than I thought would be and I was thrilled with how my veggie rolls turned out! If you’re a sushi lover like myself I would suggest investing in a bamboo sushi mat they are like ten bucks and work great!



Vegetable Roll


Ingredients:


2 C water


1 C brown rice


3 large carrots peeled and chopped


1 large cucumber peeled


1 avocado


2 tbsp sesame seeds


1 tbsp rice wine


3 sheets nori


Directions: Cook rice according to package directions, fluff with a fork and pour into a large bowl. Cool and stir in rice wine. In the meantime peel and cut veggies into strips. Cover your sushi mat in saran wrap lay a piece of nori down and cover with rice. Lay down 3 strips of cucumbers, 3 pieces of carrot, and 3 pieces of avocado. Sprinkle with sesame seeds, wet the edges of the nori and roll. Using a sharp knife slice the roll into 1 inch thick pieces.


Cook rice place into a large bowl, and sprinkle with rice wine vinegar.


Slice up vegetables and set them aside.


Get your nori out


and lay on your sushi mat. Top with brown rice


lay down vegetables and sprinkle with sesame seeds.


Roll your mat up and cover the vegetables using your finger place water at the end of the nori


it should look like this after your first roll.


Continue rolling keeping everything nice and tight.


Using a sharp knife cut sushi into 1 inch pieces.



Grab your chopsticks and dig in! Ohhh it was sooo good, exactly like a vegetarian roll you would get at a sushi restaurant. I loaded each piece with wasabi, dipped my soy sauce and was extremely pleased with the results. This is definitely something I will be making and enjoying on a regular basis! Well i’m off to the gym. We are supposed to get a bunch of snow later today and I don’t want to deal with Lexington drivers, they’re terrible in the snow. Have a great Thursday!
