Sweet potatoes and Cajun roast stir fry? I wasn’t sure of it myself whether this will come out well. I love sweet potatoes and I had some left over Cajun roast. Giving it a try won’t kill. Worse come to the worse, I eat the whole plate myself and the rest of my family eats plain rice…haha. But to my surprise and delight, this combination came out a hit in my family. Everyone liked it very much. I have discovered that it can be fun to take risk and be adventurous in cooking. Most of the time no one knows even if you make mistakes. Just Keep Learning Keep Smiling!


The recipe is very simple.


Ingredients

1 sweet potato (peeled and sliced)

1 bowl Cajun roast (sliced)

4 spring onions (washed and cut)

sweet chili sauce

It’s easy to make the Cajun roast. You can use any meat. Get the tender cuts. Sprinkle some Cajun seasoning and salt over the meat. Leave to marinade at least an hour, best overnight. Pan fry it. It’s very delicious, sliced, to eat with rice. Any left over can be used for this dish.

Heat up some oil. Pan fry the sweet potato pieces until cooked. Don’t add water. If the pan is hot enough, the sweet potatoes will not stick to the bottom of the pan. The best is a thick based pan that distributes heat evenly.

Add the Cajun roast pieces and continue to fry. The sweet potatoes and roast may be a little burnt but that is where the beautiful flavour lies. Add the spring onion and some chili sauce, according to taste. Adjust the seasoning. My Cajun roast is already salty enough so I did not add any more salt to it. The taste was just right for us….spicy and very flavourful.


My children like this dish very much. They said, ‘This is sooooo good!’ It’s really good with rice.
