Sweet Yellow Squash
![]() These stuffed squash actually taste like they?re packed with sweetened oatmeal. I don?t know how that happened but they are delicious and I imagine they can even be served as part of breakfast or brunch. I rarely find cute yellow squash with scalloped edges where I live. More common are the ones shaped like zucchini so when I spotted these I knew I had to make something special. Ordinarily I would whip up something with onion, garlic, herbs, etc?but not this time. This time I went for something more like dessert. Squash for dessert, is that odd? I don?t think so, I?ve put zucchini in chocolate cake and then there?s carrot cake?so why not do something with yellow squash? Yellow squash, washed and then tops trimmed. Carefully hollow the center and reserve for stuffing. Sweet stuffing 2 Gala apples, peeled and diced the reserved squash cut up small In nonstick pan sauté the apples and diced squash until soft. To keep this low fat I used some nonstick spray and when the mix was nearly cooked I added a little orange juice. Once the stuffing was cooked I added diced walnuts, raisins, cinnamon, ground cardamom and a pinch of NuStevia. You can soften the squash by baking them covered in the oven or using the microwave. Due to limited time I microwaved the shells before stuffing them for a few minutes ? just until they were semi soft. Spoon generous amounts of stuffing in each squash and bake in 375 degree preheated oven until they darken and are heated through. Before serving drizzle with pure maple syrup and a sprinkle of cinnamon.
